Technically, dateline can't actually arrest the people who show up at the house. While it is illegal to even attempt to have sex with a minor, even if the sex never actually happens, it is not illegal to attempt to have sex with someone over the age of 18, even if at the time that the arrangement was made, the man thought she was under 18. The girl that works with dateline for "To Catch a Predator" is actually over 18, so regardless of the mens' intentions, he has done nothing illegal. This show does more harm than good, since nothing that they find out is upholdable in court.

Secondly, cops and reporters can lie to you all they want. Imagine if a police officer was trying to infiltrate an organized crime ring and was required to identify herself as a cop when asked. Think this through. Finally, it is not illegal for a cop to pose as an underage girl online. If the perpetrator initiates the crime, without any direct persuasion from the cop, it can be assumed that the crime would have been committed.
